Mediterranean Lunch

Let's just put it out there...

I am addicted to Feta cheese. 

I could put it on anything, and sometimes do.  So, imagine my surprise when I actually weighed a serving size of one ounce and saw how much that actually was, and for only ONE POINT (I use President Feta in the bulk container from Costco). 

I made this delicious lunch the other day and have had it every day since.  It is 7 points in total, including the whole ounce of Feta.  The hummus is filling and this lunch lasts me hours, which is probably why I keep making it.  You can skip the salad and the sandwhich would only be 5.5 points on the Points Plus program:

Sandwhich:
  • 1 Sandwhich Flat (the one I used is 3 points)
  • 2 Tbsp Garlic Hummus (Trader Joe's is only 2 points)
  • 1 Roma Tomato
  • .5 ounce Feta Cheese
Salad:

  • 1 C Organic Baby Spinach
  • .5 ounce Feta Cheese (Total Feta = 1 oz for 1 PP)
  • 1 Roma Tomato
  • 2 Tbsp FF Balsamic Vinaigrette (I use Trader Joe's at 1 PP per serving)
