Road Trip

I am truly a slacker first thing in the morning. My kids are early risers, like 6 am early, and I can barely function before 7:30 and two cups of coffee. I've resorted to letting The Big Little One watch Blue's Clues while I feed The Little Little One and let the caffeine perk me up.

This morning I am sitting among three baskets full of clean laundry, all ready to be packed away for our trip to see family in Michigan this weekend. We are road tripping it 16 hours with two kids in a tiny Hyundai Santa Fe.

Dear Lord...what were we thinking? We have a 2.5 year old who hasn't sat still for almost 2 years, and an 8 month old who just learned how to crawl and doesn't want to be in her carseat.

Thankfully, my Mom is already chilling a bottle of Chardonnay in her fridge for when we arrive!

In my quest to lose weight, I am planning on packing a cooler full of healthy snacks for us and The Big Little One. Instead of stopping for junk food on the road, we'll be noshing on:

  • Presliced carrot and celery sticks with homemade ranch dip (made with FF Sour Cream)
  • Bagged apple slices with grapes
  • String cheese
  • Squeezable yogurt
  • Nuts and pretzels

And, through a search for snacks, I happened upon Trail Enchiladas:

Whole grain tortillas spread with reduced fat cream cheese, sprinkled with dried fruit and nuts, and rolled up like an enchilada!

The Big Little One will eat those RIGHT UP. And so will his Mom.

Oooh I will be checking out that site for sure! As much as we take just weekend trips to get out of Hell (aka Chincoteague) it definitely takes a toll on our diets, being that they only food you can really stop to get is fast food. Thanks!
